Going through these warmer days makes me think about refreshing and unique cocktails to try. I had a bottle of Edinburgh Gin’s rhubarb and ginger liqueur in my cupboard waiting for me to grab and try for quite a while. To be honest, I didn’t know much about rhubarb before I decided to try this liqueur. And now I love it after trying the delicious rhubarb ginger gin cocktail!

What is rhubarb?

Let’s start with the star of the show – rhubarb! This vibrant, tangy spring vegetable brings a burst of flavour to this cocktail. And yes, rhubarb is a vegetable, not a fruit. How to make rhubarb syrup

This cocktail is made with homemade, simple rhubarb syrup. When there’s “simple” in the name of a syrup, it means that it’s really easy to make and the ratio is usually 1 part of sugar for each part of water. Adding fruit, spice or vegetables usually does not change this. Depending on the strength of the flavour you desire and the nature of the ingredient, you can double the ratio of the flavour or go subtle.

I used 1 cup of water, 1/2 cup sugar and 2 cups of rhubarb for this cocktail while making my syrup. You can see the recipe for the rhubarb syrup here.

This gin cocktail is incredibly simple to make:

Step 1: Ingredients and preparation

Make your rhubarb syrup a day prior if you can by following the recipe above.

Juice your fresh lime, get your ginger and a stick of rhubarb ready.

Grab your Edinburgh rhubarb and ginger liqueur, ice, cocktail shaker and cocktail stick to garnish.

Put your martini or coupe glass in the refrigerator.

Step 2: Shake it up!

Thinly slice 3-4 pieces from your ginger and put in your shaker.

Add the rhubarb syrup and lightly muddle the ginger.

Put the lime juice and gin liqueur, add lots of ice and shake!

Step 3: Strain

Grab your glass from the refrigerator and strain your drink into it.

Step 4: Garnish

Slice a long, thin piece of rhubarb. First, halve the rhubarb to length and then use a peeler if you have one, or carefully cut a thin slice.

Put it on the cocktail stick by making a ribbon shape and voila! Your drink is ready to enjoy!

Tips to have the perfect rhubarb ginger gin cocktail

Use fresh ingredients

As I always recommend: use fresh ingredients as much as possible. Try to avoid market-bought lime juice or frozen rhubarb.

Make your syrup a day before

If you make your syrup a day before and let it sit overnight, the flavour deepens, creating a richer taste in your drink.

Don’t over-muddle the ginger

Ginger is a very strong root vegetable. Muddling it more than necessary will reveal bitter flavours. Make sure that you’re gentle when muddling, not too much but also enough to get the flavours running.

Put the rhubarb slice in the freezer

Prepare your rhubarb slice before you start making the cocktail. Use a peeler if possible to have a consistent thickness all the way. After cutting the long rhubarb slice, put it in the freezer until you’re ready to garnish. The time between you start making your cocktail and having it ready to be garnished will be just enough to have a stiff slice that holds the shape and short enough not to let it freeze.

Chill your glasses. Always!

Ingredients
  

  • 1/2 part rhubarb syrup
  • 1 part fresh lime juice
  • 2 parts rhubarb ginger gin liqueur from Edinburgh Gin Distillery
  • 3-4 slices ginger thin sliced
  • 1 slice rhubarb cut to length to garnish (optional)

Instructions
 

  • Put the ginger slices at the bottom of your shaker.
  • Add the rhubarb syrup and lightly muddle ginger pieces.
  • Add the lime juice and the gin liqueur.
  • Add lots of ice and shake well.
  • Strain into your chilled glass.
  • Put the rhubarb slice in a cocktail stick. Enjoy!
